10 Min Spicy Pork Stir Fry

Speedy and spicy, ready in 10 mins.

Serves: 4 Time: 10 minutes
Ingredients
50g rice per person, dry weight
450g pork mince
1 tbsp olive oil
2 cloves garlic, crushed
1 onion, sliced
1 aubergine, cut into half moons
1 red pepper, cut into strips
60ml tamari or soy sauce
2 tbsp brown sugar
4 tsp sriracha sauce
200g green beans, cut into 5cm pieces
20g coriander, chopped
Method
Cook your rice per pack instructions.
Throw the pork into a large pan over a medium-high heat, and brown the pork, breaking it up with a wooden spoon. Transfer to a plate and set aside.
Return the pan to a medium heat and warm the olive oil. Whack in the garlic and onion and sauté for 4 minutes until softened, then increase the heat to medium-high and stir-fry the aubergine and pepper for 2-3 minutes.
Meanwhile, in a small bowl combine the tamari, sugar and sriracha and add to the pan, along with the green beans and cooked pork. Sauté until the green beans are bright green and the pork has warmed through.
Top with freshly chopped coriander and serve with your rice! Easy peasy.
