All Day Breakkie

30 Minute All Day Breakkie. Ooooff what a treat - perfect for a weekend brunch.

Serves: 2 Time: 30 minutes


 

Ingredients

  • 400g Can Of Chopped Tomatoes

  • 1 Red Onion, diced

  • 1 Garlic Clove

  • 2 Tablespoons Apple Cider Vinegar, or substitute for white wine vinegar

  • 135g Streaky Bacon

  • 1 Pinch of Chilli Flakes

  • 350g Potatoes, peeled and cut into chunks

  • 5g Chives, chopped

  • 2 Tablespoons Olive Oil

  • 1 Chicken Stock Cube

  • 1 Can Of Cannellini Beans

  • 1/2 Tablespoon of Sugar

  • 3 Tablespoons Plain Flour

Method

  1. Add potatoes to a pan of cold salted water, bring it to a boil, remove and drain when tender.

  2. Heat a large, non-stick pan over a high heat, with 1 tablespoon of olive oil. Add the onion, garlic, a pinch of salt and chilli flakes. Cook until onions are translucent. Add the tomatoes, crumble in the stock cube and add 100ml boiling water, sugar and the apple cider vinegar, once it's bubbling, reduce the heat and simmer for 10 mins. Then add the beans and keep warm until serving.

  3. When the potatoes are cool, mash them up with the chives, seasoning, and 3 tablespoons of flour. Mix well. Then start to make mash balls with your hands, flattening them into potato cakes.

  4. Heat a large, non-stick pan with 1 tablespoons of olive oil, over a medium-high heat. When hot, fry the potato cakes until golden. Remove and set aside.

  5. In the same pan, add bacon and cook to your liking. Serve the potato cakes with beans and bacon on top!
