Asian Rice Noodles

Lovely dish full of flavour, ready on the table in under 15 mins.



Serves: 4 Time: 15 minutes

 

Ingredients

  • 200g dried vermicelli noodles

  • 2 tsp olive oil

  • 400g lean turkey mince

  • 2 garlic cloves, minced

  • 4 shallots, sliced

  • 1 tbsp. ginger, grated

  • 1 red chili, sliced

  • 200g green beans, trimmed

  • 4 courgettes, cut into strips

  • 2 tbsp. tamari

  • 1 tbsp. honey

  • 8g basil leaves


Method

  1. Cook the noodles according to instructions on the packaging.

  2. Meanwhile, heat 1 teaspoon of olive oil in a large pan and cook the turkey for 2-3 minutes.

  3. Add the garlic, shallots, ginger and chili, stir-frying for a further 2 minutes, or until the turkey is cooked through.

  4. Remove the mixture from the pan and set aside. Heat the remaining teaspoon of olive oil in the pan and stir-fry the green beans and courgette for 5 minutes until slightly golden.

  5. Add the turkey mixture back into the pan, along with the tamari and honey, stir to combine and heat through.

  6. Now stir through the basil leaves and serve with the rice noodles. Yum!
