Avocado Black Bean and Eggs

5 Minute Avocado Black Bean and Eggs. Packed with protein. So quick and easy to make - perfect for a weekend brunch.

Serves: 2 Time: 10 minutes



  • 2 Teaspoons Olive Oil

  • 1 Red Chilli, deseeded and thinly sliced

  • 1 Large Garlic Clove, sliced

  • 2 Large Eggs

  • 400g Can Black Beans

  • 1⁄2 Can Chopped tomatoes

  • 1⁄4 Teaspoon Cumin Seeds

  • 1 Small Avocado, halved and sliced

  • 1 Handful Coriander, chopped

  • 1 Lime, cut into wedges


  1. Heat the oil in a large non-stick frying pan, add the chilli and garlic and cook until translucent.

  2. Crack the eggs into the pan. When they begin to firm up, begin to spoon the beans and tomatoes (straight from the can) around the eggs, sprinkle the cumin seeds on top and gently warm through.

  3. Once warmed, remove the pan from the heat, add the chopped avocado, sprinkle over the coriander and serve with lime wedges on the side.
