Baked Carrot Fritters

Perfect for lunch on the go or at home and can be made in advance.




Serves: 4 Time: 25 minutes

 

Ingredients

  • 4 medium carrots, grated

  • 1 small egg

  • 4 tbsp plain flour

  • 1 garlic glove, minced

  • 1 tsp ground cumin

  • 1 pot of hummus and salad to serve


Method

  1. Heat the oven to 220°C and line a baking tray with baking paper. In a bowl, mix all the ingredients together until well combined. Take a heaped tablespoon of the batter and place it on your baking tray, flatten slightly with your hand to form a round shaped fritter.

  2. Bake in the oven for 12 mins, then turn them over and bake for a further 12 mins until golden.

  3. Serve with salad and dipped into hummus. Can be pre-made and kept in an airtight container in the fridge for 3 days.
