Baked Cod & Spinach

Nice and fresh packed with protein and vitamins.

Serves: 2 Time: 30 minutes



  • 400g baby potatoes

  • 2 cod fillets, 230g each

  • ½ lemon, juiced

  • 2 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp turmeric

  • 2.5 tbsp plain flour

  • 3 tbsp olive oil

  • 150g frozen spinach

  • 4 tbsp milk

  • 45g breadcrumbs

  • 25g parmesan cheese

  • Steamed greens of your choice, to serve


  1. Cook the potatoes per package instructions.

  2. Rinse the fish and pat dry. Next, drizzle with lemon, then season with salt and pepper, and once minced garlic clove. Sprinkle with the spices: paprika, oregano, turmeric, and then coat in 2 tbsp flour.

  3. Prepare the spinach layer by heating 1 tbsp oil in a frying pan. Add a second garlic clove and fry for 2-3 mins. Whack in the spinach and stir for 4-5 mins until wilted.

  4. Next, throw in the milk and season, cook for 2-3 min, then throw in ½ tbsp flour and mix well.

  5. Mix the breadcrumbs, parmesan and 2 tbsp olive oil in a small bowl.

  6. Arrange the fish on a baking tray, top the fish with a layer of spinach and a sprinkle of the breadcrumbs mix.

  7. Bake in the oven for 20 mins and serve with your baby potatoes and steamed greens of your choice.
