Bali Satay Skewers

15 Minute Bali Satay Skewers. A taste of Bali with these nutty skewers packed with flavour!

Serves: 2 Time: 15 minutes

Ingredients

  • 4 Skewers, soaked in water

  • 1⁄2 Teaspoon Dried Chilli Flakes

  • 2 Tablespoons Olive Oil

  • 1 Small Bunch Of Coriander, chopped

  • 1 Red Onion, quartered

  • 1 Red Pepper, cut into chunks

  • 1 Yellow Pepper, cut into chunks

  • 1 Tbsp Curry Powder

  • 1 Courgette, cut into chunks

  • 1 Tablespoons Of Honey

  • 2 Tablespoons Soy Sauce

  • 2 Tablespoons Peanut Butter

  • 50g Solid Creamed Coconut

Salad Ingredients

  • 180g Bag Mixed Lettuce leaves

  • 1⁄2 Cucumber

  • 1⁄2 Red Onion

  • 1 Pomegranate or pack of seeds

  • Optional sesame seeds to sprinkle on top


Method

  1. Heat the oven to 220°C.

  2. Add all of the chopped vegetables to a bowl and drizzle them with oil, add the curry powder and season well. Divide them between the skewers, then pop them on an oven-proof tray and roast for around 15 mins.

  3. Next, add the creamed coconut to a bowl along with peanut butter and 200ml of boiling water. Mix well and transfer it to a saucepan, add honey, soy and chilli flakes and mix well. Allow to come to a boil over medium heat, until the sauce has thickened.

  4. Meanwhile, crush half of the pomegranate seeds in a bowl. Then toss them together with the remaining salad ingredients.

  5. Divide the salad ingredients between bowls, top with the roasted veg skewers, peanut sauce and a scattering of coriander.
