Bali Satay Skewers

15 Minute Bali Satay Skewers. A taste of Bali with these nutty skewers packed with flavour!

Serves: 2 Time: 15 minutes
Ingredients
4 Skewers, soaked in water
1⁄2 Teaspoon Dried Chilli Flakes
2 Tablespoons Olive Oil
1 Small Bunch Of Coriander, chopped
1 Red Onion, quartered
1 Red Pepper, cut into chunks
1 Yellow Pepper, cut into chunks
1 Tbsp Curry Powder
1 Courgette, cut into chunks
1 Tablespoons Of Honey
2 Tablespoons Soy Sauce
2 Tablespoons Peanut Butter
50g Solid Creamed Coconut
Salad Ingredients
180g Bag Mixed Lettuce leaves
1⁄2 Cucumber
1⁄2 Red Onion
1 Pomegranate or pack of seeds
Optional sesame seeds to sprinkle on top
Method
Heat the oven to 220°C.
Add all of the chopped vegetables to a bowl and drizzle them with oil, add the curry powder and season well. Divide them between the skewers, then pop them on an oven-proof tray and roast for around 15 mins.
Next, add the creamed coconut to a bowl along with peanut butter and 200ml of boiling water. Mix well and transfer it to a saucepan, add honey, soy and chilli flakes and mix well. Allow to come to a boil over medium heat, until the sauce has thickened.
Meanwhile, crush half of the pomegranate seeds in a bowl. Then toss them together with the remaining salad ingredients.
Divide the salad ingredients between bowls, top with the roasted veg skewers, peanut sauce and a scattering of coriander.
