Banana Bread

35 Minute Banana Bread. So easy and simple to make, and great for breakfast on the go.

Serves: 5 (2 slices per person for breakfast) Time: 35 minutes

  • 3 Ripe Bananas

  • 180g Rolled Oats

  • 2 Eggs

  • 6 Tablespoons Maple Syrup (or Honey)

  • 1 Teaspoon Bicarbonate of Soda

  1. Heat your oven to 175°C. Lightly grease 9x5-inch bread/loaf tin and set aside.

  2. Throw all ingredients into a blender and blend until smooth and well combined. Pour the batter into the tin.

  3. If you like, you can place a few thin slices of banana on top.

  4. Bake for 30-35 minutes or until cooked. Some ovens may take a little longer. You can test by pricking with a cocktail stick or knife, and checking if it comes out clean.

  5. Let the banana bread cool completely in the tin, before slicing.

  6. Store in an airtight container for 2-3 days or in the fridge for up to a week.
