Banana Pancakes

5 Minute Breakfast Banana Pancakes. The most popular breakfast on the Rosie plan, minimal ingredients and super easy and quick to make. Even better in a waffle iron!

Serves: 1 Time: 5 minutes



  • 1 Banana

  • 2 Eggs

  • 1 Teaspoon of Cinnamon Powder

  • 1 Teaspoon of Vanilla Extract


  1. Mash up the bananas in a large bowl.

  2. Whisk the eggs (using a fork is just fine!) and add to banana with the drops of vanilla and cinnamon.

  3. Fry in a pan with a little heated olive oil (as small as possible oil).

  4. Best flipped over with a fish slice or really thin spatula. If you fry with the lid on the pan this will help to set the mixture before flipping. Alternatively, you can cook in a waffle iron
