Banging Frittata

15 Minute Banging Frittata. Packed with protein and literally is bloody banging - perfect for a weekend brunch.

Serves: 2 Time: 15 minutes



  • 2 Tablespoons Olive Oil

  • 2 Pork Sausages

  • 1 Red Pepper, chopped

  • 100g Mushrooms, sliced

  • 1 Onion, sliced

  • 6 Eggs

  • 50g Feta Cheese, crumbled

  • Handful of Spinach


  1. Heat oil in a deep frying pan. Cook the sausages whole, making sure they are browned evenly. Once done, take them out, slice and set aside.

  2. Whack in the mushrooms, spinach, pepper and onions, stirring until they are nice and soft.

  3. Beat the eggs together and season well. Add the sausages back into the pan.

  4. Pour the egg mixture into the pan and cook over medium heat until the bottom is nice and brown.

  5. Finally, crumble the feta on top and finish under the grill for a further 3 minutes.

  6. Serve with a fresh green salad and enjoy!
