40 Minute Bavarian Potato Soup. Perfect for a cold day, love this soup!
Serves: 4 Time: 40 minutes
Ingredients
160g Bacon, diced
1 Large Onion, chopped
1 Garlic Clove, minced
600g Waxy Potatoes, chopped into chunks
1 Large Leek, sliced
2 Carrots, diced
150g Celeriac, diced
600g Tomatoes, diced
950ml Vegetable Broth
1 Teaspoon Thyme
1 Teaspoon Rosemary
1 Teaspoon Oregano
1⁄2 Teaspoon Salt
1 Teaspoon Black Pepper
1 Bay Leaf
1 Handful Chopped Fresh Parsley
Optional - add fresh chilli for those that love spice!
Method
In a large pot, fry the bacon and onion together until golden around 6 mins. Add garlic and cook for another minute.
Next add all the remaining ingredients, but save the parsley for later. Bring the pan to boil, then reduce the heat to medium and cover allowing it to simmer for around 40 minutes.
When ready to serve, add parsley and season to taste!
