25 Minute Beef Goulash Pasta. Home comfort pasta with tomato, beef mince and a cheesy topping ooooffff!

Serves: 4 Time: 25 minutes
Ingredients
300g Beef Mince
100g Cheddar Cheese, grated
Freshly chopped parsley, for garnish
200ml Beef Broth
1 Tablespoon Olive Oil
1 Onion, chopped
1 Garlic Cloves, minced
1 Tablespoon Tomato Paste
400g Passata
400g Can Chopped Tomatoes
1 Teaspoon Italian Seasoning or Oregano
1 Teaspoon Paprika
200g Macaroni, or other small pasta
Method
Heat the oil in a large non-stick pan, over medium heat. Add onion and cook until translucent, then add garlic, cooking for a further minute. Add the mince, cook mixing well so it cooks evenly. Drain any excess fat, then season well.
Next add tomato paste and stir to coat the beef, pour in broth, passata, and chopped tomatoes. Season with Italian seasoning and paprika, and stir in macaroni. Bring to a simmer and cook until pasta is tender, around 15 minutes.
Finally, mix in cheese and remove from heat. Sprinkle some parsley on top to serve!
