High protein dinner ready in 30 minutes, perfect for leftovers the next day too!
Serves: 4 Time: 30 minutes
Ingredients
500g beef mince 5% fat
1 onion finely chopped
3 garlic cloves, finely chopped
25g ginger, finely chopped
15g fresh coriander, leaves and stalks chopped separate
2 tbsp curry powder
400g canned chopped tomatoes
200ml beef stock
200g natural yoghurt 0% fat
300g frozen peas
50g rice per person, preferably brown rice.
Method
Heat a dry pan over high heat and brown the beef mince, once browned throw in the onion, garlic and ginger. Saute for 6-8 mins until softened.
Next, stir in the coriander stalks and curry powder and cook stirring for 2-3 mins.
Whack in the stock and chopped tomatoes, then season with salt and pepper. Bring to a boil, then reduce the heat to a simmer for 20 mins. Stirring now and then.
Meanwhile, cook your rice per pack instructions.
After 20 mins, stir through 1 tbsp yoghurt, half the coriander leaves and the frozen peas. Cook for a further 2 mins until the peas are cooked.
Once done, serve with rice, sprinkle over remaining coriander and another tbsp of yoghurt. Enjoy!
