Beef Keema

High protein dinner ready in 30 minutes, perfect for leftovers the next day too!


Serves: 4 Time: 30 minutes


 

Ingredients

  • 500g beef mince 5% fat

  • 1 onion finely chopped

  • 3 garlic cloves, finely chopped

  • 25g ginger, finely chopped

  • 15g fresh coriander, leaves and stalks chopped separate

  • 2 tbsp curry powder

  • 400g canned chopped tomatoes

  • 200ml beef stock

  • 200g natural yoghurt 0% fat

  • 300g frozen peas

  • 50g rice per person, preferably brown rice.


Method

  1. Heat a dry pan over high heat and brown the beef mince, once browned throw in the onion, garlic and ginger. Saute for 6-8 mins until softened.

  2. Next, stir in the coriander stalks and curry powder and cook stirring for 2-3 mins.

  3. Whack in the stock and chopped tomatoes, then season with salt and pepper. Bring to a boil, then reduce the heat to a simmer for 20 mins. Stirring now and then.

  4. Meanwhile, cook your rice per pack instructions.

  5. After 20 mins, stir through 1 tbsp yoghurt, half the coriander leaves and the frozen peas. Cook for a further 2 mins until the peas are cooked.

  6. Once done, serve with rice, sprinkle over remaining coriander and another tbsp of yoghurt. Enjoy!
