15 Minute Beetroot & Feta Salad. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 2 Time: 15 minutes
Ingredients
50g bulgur wheat
2 oranges, ½ zested and juiced, the rest peeled and chopped
1 garlic clove
1 teaspoon apple cider vinegar
3 tablespoons mint, chopped
3 spring onions, sliced
4 walnut halves, broken
4 pitted Kalamata olives, halved
2 beetroots, chopped
40g feta or vegan alternative
Method
Put the bulgur in a small pan, cover with water, bring to the boil, then cook, covered, for 5 mins or until tender.
Drain well, press out any excess water and whack into a bowl.
Stir in the orange zest and juice, garlic and vinegar, then mix through the mint, spring onions, walnuts and olives.
Finally, stir in the beetroot and chopped orange, whack into containers and top with the feta.
2 servings are included in this recipe for your lunch for 2 days.
