15 Minute Beets on Toast. You will love this, honestly give it a go. So fresh and easy to make - perfect for a weekend brunch.

Serves: 2 Time: 15 minutes
Ingredients
2 thick slices of seeded wholegrain bread or sourdough
200g can chickpeas, drained
200g ready-cooked beetroot, sliced
1 tablespoon lemon juice
1 small garlic clove
1 teaspoon oil
30g feta, crumbled
6 pitted olives, halved (I like to use Kalamata)
A few fresh mint leaves (optional)
Method
Toast the bread.
Meanwhile, tip the chickpeas into a bowl with half the beetroot, the lemon juice, garlic and oil, and blitz with a stick blender to make hummus (or use your blender).
Halve your toast, spread on your homemade hummus, top with the remaining beetroot and scatter with feta, olives and optional mint. So quick, easy and colorful!
