Blueberry Salad Bowl

Veggie lunch so easy to make!

Serves: 2 Time: 5 minutes



  • 2 slices of bread

  • Bag of salad leaves

  • ½ cucumber, sliced

  • 75g feta cheese, cubed

  • 75g blueberries

  • 2 tbsp pumpkin seeds

  • 1 tbsp olive oil

  • 2 tsp honey

  • ½ lemon, juiced


  1. Toast the bread, then tear into smaller pieces.

  2. Make a dressing with the olive oil, honey, lemon juice and black pepper.

  3. Assemble the salad, evenly spreading the ingredients into each bowl.

  4. Then drizzle over the dressing. Done!
