20 Minute Breakfast Muffins. So easy and simple to make, packed with protein and great for breakfast on the go.
Serves: 3 (2 per person) Time: 20 minutes
Ingredients
6 Eggs, beaten
30g Feta, crumbled
Fresh Basil (or cupboard spice is fine)
1 Plum Tomato
Salt and Black Pepper
Method
Mix the eggs, basil, feta and salt & pepper together. Then pour into 6 muffin cases or silicone if you have them.
Thinly slice the tomato and place on paper towel to absorb some of the moisture. Then gently place on the top of each muffin.
Bake at 180°C for 15-20 minutes or until set.
Make ahead of time and enjoy 2 muffins for breakfast on the go.
