Burger Night with Red Pepper Salsa

30 Minute Burger Night with Red Pepper Salsa. Indian spiced burger for something a little different that will satisfy your taste buds!

Serves: 4 Time: 30 minutes

  • 400g Lean Beef Mince

  • 1 Onion, diced

  • 1 Carrot, grated finely

  • 2 Garlic Cloves, minced

  • 2 Teaspoons Dijon Mustard

  • 1 Egg, beaten

  • 4 Bread Rolls

For the Salsa (or you could just use shop bought to save time)

  • 2 Large Red Peppers, halved & deseeded

  • 100g Cherry Tomatoes, halved

  • 1/2 Lime, juiced

  • ½ Red Onion

  1. Heat oven to 200°C.

  2. Combine the mince, onion, carrot, garlic, mustard and the egg. Season well and form 4 even sized patties (not too thick). Then whack them into the fridge to chill (around 10 mins).

  3. Throw the peppers on an oven proof tray and bake for 20 minutes, then chuck in the tomatoes cut side up. Bake for 10 more mins until the skin of the peppers are charred and the tomatoes are soft.

  4. Take out from the oven and put the peppers in a sandwich bag to sweat for 10 mins, allowing the skin to loosen.

  5. Meanwhile heat a tablespoon of oil in a griddle pan on medium heat. Once hot, griddle your burgers for 5 mins per side (less if you like them pink).

  6. While the burgers are getting nice and juicy, peel your peppers and chop. Throw them in a bowl along with the tomatoes, diced onion and the lime juice.

  7. Remove the burgers from the pan, then throw in the buns cut side down to crisp up and soak in the meat juices.

  8. Once nicely charred, build your burgers and enjoy with a large salad.
