5 Minute Burrata Salad. So fresh and easy to make - perfect for a weekend brunch.
Serves: 4 Time: 5 minutes
Ingredients
500g Tomatoes, cut into wedges
½ Teaspoon Of Sugar
150g Broad Beans
1 Handful Of Basil
3 Tablespoons Olive Oil
2 Teaspoon Dijon Mustard
Zest of one Lemon
1 Tablespoons Red Wine Vinegar
200g of Burrata or 250g of Mozzarella
Extras as optional
1 Tablespoons Tarragon
1 Tablespoons Mint Leaves
1 Pinch Of Fennel Seeds
Handful Chives and Parsley
50g Hazelnuts, toasted, roughly chopped
Extra Green Salad of choice
Method
Chop the tomatoes into slices and wedges, then put them in a bowl. Toss with 1/2 tsp salt and the sugar, then marinate for 30 mins.
Boil the beans for 2 mins, drain and cool. Then peel them out of their shells.
Finely chop the herbs, put them into a bowl and whisk in the olive oil, mustard, fennel seeds, most of the lemon zest, and red wine vinegar. Season, then stir in the broad beans.
Divide the tomatoes equally onto plates. Top with the burrata or mozzarella, and spoon over the broad bean mixture.
Sprinkle with the hazelnuts and rest of the lemon zest and serve with extra green salad if you like.
