30 Minute Butterbean Stew Jackets. Great for lunch or dinner!
Serves: 4 Time: 30 minutes
Ingredients
3 Tablespoon Olive Oil
2 Shallots, diced
2 Carrots, diced
1 Onion, sliced
6 Large Tomatoes, chopped
400g Can Butter Beans, drained
4 Jacket Potatoes
1 Small Bunch Flat-Leaf Parsley, chopped
Method
Heat the oven to 200°C. Then pop the jackets in the microwave for around 10-15 minutes. Once done whack them in the oven to crisp up.
Meanwhile, add the oil to a large pot, add the shallots, onions and carrots. Allow them to sweat, stirring frequently until soft.
Next, add the tomatoes and cook gently for 15 mins, followed by the beans, allowing them to warm through. Season to taste.
Stir in the parsley and serve on top of your warm jackets. Easy!
