20 Minute Cairo Lamb Koftas. So many flavours, my favourite way of making lamb - in a kebab!
Serves: 4 Time: 20 minutes
Ingredients
100g Pomegranate Seeds
500g Lamb Mince (or Beef)
240g Natural Yoghurt
2 Red Onion, quartered
240g Couscous
2 Garlic Cloves, minced
1 Tablespoon Olive Oil
Optional Ingredients
2 Teaspoon Fennel Seeds
1 Bunch Mint, chopped
50g Sultanas
Lemon for the yoghurt
Method
Heat the oven to 220°C. Toss the onion in 1 tablespoon of olive oil and bake in the oven for 20 mins.
Add the fennel seeds and mince in a large bowl, season and mix well. Form 8 sausage kofta shapes.
Heat a large non-stick pan, then when hot add the koftas and cook until browned all over. Then add them to the tray with the onions and cook in the oven for the final 8 minutes.
Meanwhile, pop the couscous and sultanas to a large bowl with 400ml of boiling water - cover and set aside for 10 mins.
In a small bowl, add the garlic and yoghurt and season to taste. Set aside until serving.
When the onions are done, add them to the couscous along with the mint and pomegranate seeds. Mix well and divide between plates. Top with the lamb koftas and the yoghurt on the side.
