Cajun Salmon & Sweetcorn Salsa

Serve with rice for your dinner, or just on its own for your lunch. So colourful and fresh.




Serves: 4 Time: 10 minutes

 

Ingredients

  • Large can of sweetcorn, drained

  • 350g cherry tomatoes, quartered

  • 60g coriander leaves, chopped

  • 4 salmon fillets, around 170g each

  • 2 tbsp cajun seasoning

  • 2 tbsp olive oil

  • 50g rice per person


Method

  1. Heat the oven to 220°C. Mix the cajun seasoning with olive oil and rub all over the salmon. Whack the salmon on a baking tray and bake in the oven for 12-15 mins, until cooked through.

  2. Throw the corn, tomato and coriander into a bowl and mix well.

  3. To serve, divide the salmon, salsa and rice between bowls.
