Serve with rice for your dinner, or just on its own for your lunch. So colourful and fresh.

Serves: 4 Time: 10 minutes
Ingredients
Large can of sweetcorn, drained
350g cherry tomatoes, quartered
60g coriander leaves, chopped
4 salmon fillets, around 170g each
2 tbsp cajun seasoning
2 tbsp olive oil
50g rice per person
Method
Heat the oven to 220°C. Mix the cajun seasoning with olive oil and rub all over the salmon. Whack the salmon on a baking tray and bake in the oven for 12-15 mins, until cooked through.
Throw the corn, tomato and coriander into a bowl and mix well.
To serve, divide the salmon, salsa and rice between bowls.
