Caprese Chicken

20 Minute Caprese Chicken. Perfect for lunch or dinner, this chicken dish is so healthy and full of tasty flavours.

Serves: 4 Time: 20 minutes



  • 60ml Balsamic Vinegar

  • 60g Sugar

  • 1 Tablespoon Honey

  • 3 Chicken Breasts

  • 2 Tablespoon Italian seasoning, divided

  • 1 Teaspoon Garlic Powder

  • 3 Tablespoons Olive Oil, divided

  • 200g Pasta, any you prefer (short)

  • 100g Cherry Tomatoes, halved

  • 50g Mozzarella, sliced


  1. In a medium sized pan, make a balsamic glaze by adding vinegar, honey and sugar, mix well. Bring the mixture to a gentle boil over medium heat, reduce to low, and simmer until the mixture has halved. Once done, remove from heat and transfer to a separate bowl to cool.

  2. Cook the pasta according to the package instructions.

  3. Meanwhile, in a deep frying pan, heat 2 tablespoons of oil over medium heat. Add seasoned chicken and cook evenly on both sides, around 2 mins per side. Remove from the pan and set aside.

  4. Once the pasta is done, drain well and add it to the empty pan, stir in the italian seasoning, tomatoes, pinch of salt and pepper, and stir well. Allowing it to cook through, around 4 mins.

  5. Next add the chicken and mozzarella to the pan, cover with a lid and continue to cook until the cheese is melted.

  6. Serve everything together, drizzle with the balsamic glaze and store leftovers in tupperware bowls ready for lunch.
