Caprese Salad

5 Minute Caprese Salad. So fresh and easy to make - perfect for a weekend brunch.

Serves: 4 Time: 5 minutes


 

Ingredients

  • 4 large vine-ripened tomatoes, cut into 1/4-inch slices

  • 1/2 teaspoon sugar

  • 1/2 teaspoon salt, divided

  • 350g fresh mozzarella, cut into 1/4-inch slices

  • Freshly ground black pepper, to taste

  • Extra virgin olive oil, for drizzling

  • Balsamic glaze, for drizzling (or just use balsamic vinegar)

  • 30g fresh basil, roughly chopped

Method

  1. Arrange the tomato slices on a cutting board. Sprinkle with sugar and 1/4 teaspoon of the salt and let sit for a few minutes until the sugar dissolves.

  2. Arrange the sliced tomatoes on each plate, alternating with the sliced mozzarella. Sprinkle evenly with the remaining 1/4 teaspoon of salt and freshly ground black pepper.

  3. Drizzle about 1 tablespoon of olive oil evenly over the top of each plate, followed by an equal amount of the balsamic glaze.

  4. Scatter the roughly chopped basil over top. Easy peasy!
