5 Minute Caprese Salad. So fresh and easy to make - perfect for a weekend brunch.
Serves: 4 Time: 5 minutes
Ingredients
4 large vine-ripened tomatoes, cut into 1/4-inch slices
1/2 teaspoon sugar
1/2 teaspoon salt, divided
350g fresh mozzarella, cut into 1/4-inch slices
Freshly ground black pepper, to taste
Extra virgin olive oil, for drizzling
Balsamic glaze, for drizzling (or just use balsamic vinegar)
30g fresh basil, roughly chopped
Method
Arrange the tomato slices on a cutting board. Sprinkle with sugar and 1/4 teaspoon of the salt and let sit for a few minutes until the sugar dissolves.
Arrange the sliced tomatoes on each plate, alternating with the sliced mozzarella. Sprinkle evenly with the remaining 1/4 teaspoon of salt and freshly ground black pepper.
Drizzle about 1 tablespoon of olive oil evenly over the top of each plate, followed by an equal amount of the balsamic glaze.
Scatter the roughly chopped basil over top. Easy peasy!
