15 Minute Carrot Biryani Great for dinner or lunch as a meal prep bowl. Enjoy!
Serves: 2 (easily doubled) Time: 15 minutes
Ingredients
1 Tablespoon Olive Oil
1⁄2 Onion, sliced
1⁄2 Green Chilli, chopped and deseeded
1⁄2 Garlic Clove, peeled
1⁄2 Tablespoon Garam Masala
1⁄2 Teaspoon Turmeric
2 Carrots, grated
1 Pack of Microwavable Rice
75g Frozen Peas
25g Roasted Cashews
1 Handful of Coriander
Method
In a large non-stick frying pan, saute the onion until translucent, add the chilli and garlic and cook for another minute.
Add the remaining spices with a splash of water cooking for another few minutes then add the carrots mixing well.
Next add the rice, peas and cashews, combine well and cook over high heat for 5 minutes.
Serve in bowls with coriander sprinkled on top and enjoy!
