Carrot Biryani

15 Minute Carrot Biryani Great for dinner or lunch as a meal prep bowl. Enjoy!

Serves: 2 (easily doubled) Time: 15 minutes



  • 1 Tablespoon Olive Oil

  • 1⁄2 Onion, sliced

  • 1⁄2 Green Chilli, chopped and deseeded

  • 1⁄2 Garlic Clove, peeled

  • 1⁄2 Tablespoon Garam Masala

  • 1⁄2 Teaspoon Turmeric

  • 2 Carrots, grated

  • 1 Pack of Microwavable Rice

  • 75g Frozen Peas

  • 25g Roasted Cashews

  • 1 Handful of Coriander


  1. In a large non-stick frying pan, saute the onion until translucent, add the chilli and garlic and cook for another minute.

  2. Add the remaining spices with a splash of water cooking for another few minutes then add the carrots mixing well.

  3. Next add the rice, peas and cashews, combine well and cook over high heat for 5 minutes.

  4. Serve in bowls with coriander sprinkled on top and enjoy!
