Cauliflower Naan Bread Pizza

25 Minute Cauliflower Naan Bread Pizza. An Indian twist to a pizza, yummy!

Serves: 2 (easily doubled) Time: 25 minutes


 

Ingredients:

  • 2 Garlic Naan Bread

  • 1⁄2 Onion, cut into rings

  • 1 Handful Coriander, chopped

  • 70g Shredded Mozzarella

  • 3 Tablespoons Tomato Puree

  • 1 Tablespoon Italian Herbs/Oregano

Pizza Topping

  • 1⁄2 Cauliflower Head, cut into florets

  • 1 Medium Baking Potato, diced

  • 1 Tablespoon Veg Oil

  • 1 Onion, diced

  • 1 Teaspoon Ginger, grated

  • 1 Garlic Clove, minced

  • 1 Teaspoon Cumin Seeds

  • 1 Teaspoon Chilli Powder

  • 1⁄4 Teaspoon Garam Masala

  • 1 Teaspoon Fresh Lemon Juice

Method

  1. Add cauliflower and potatoes to a pan of water, add salt and bring to boil. Once tender drain and set aside.

  2. In a separate non-stick pan, heat the oil and add the cumin seeds. When they start to pop, add the onions and saute until translucent. Then add the ginger and garlic, cooking for a further 2 mins.

  3. Now add the cauliflower florets, potatoes, chilli powder, and garam masala and cook for a further 4 mins.

  4. Remove from the heat, squeeze in the lemon and set aside.

  5. Next spread the tomato puree over the naans and sprinkle the Italian herb mix between them.

  6. Top each naan with the cauliflower mix, onion rings and cheese.

  7. Bake in a hot oven for around 15 mins. Then scatter over coriander to serve!
