Chicken & Mango Salsa Wraps

High protein lunch or dinner ready in 10 minutes. One of my faves, so fresh and healthy!

Serves: 4 Time: 10 minutes



  • 4 skinless and boneless chicken thighs

  • 1 tbsp olive oil

For the salsa:

  • 1 avocado, cubed

  • 1 mango, cubed

  • ½ red onion, diced

  • 1 red chilli, finely chopped

  • 1 large tomato, diced

  • ½ cucumber, finely chopped

  • 1 lime, juice only

  • 2-3 baby gem lettuce


  1. Season the chicken with salt and pepper and rub with olive oil. Next, heat a grill pan on medium-high heat and cook the chicken 3-4 mins on each side, until cooked through and browned.

  2. Meanwhile, combine all the salsa ingredients in a bowl and mix well.

  3. Once done, chop the chicken into pieces.

  4. To serve, assemble the wraps by spreading the salsa over the lettuce leaves and top with the chicken thighs. Yum!
