25 Minute Chicken Poutine. Poutine is famous from Canada and is basically chips, cheese and gravy. This combo is banging and will beat anything you've eaten in a cab on the way home after a night out!
Serves: 4 Time: 25 minutes
Ingredients
2 Chicken Breasts
1 Knob of Butter
250g Mozzarella, chopped into small chunks
300g Kale, chopped and stalks removed
2 Potatoes, cut into fries
80g Cheddar Cheese, chopped into small chunks
2 Chicken Stock Cubes
3 Tablespoons Olive Oil
2 Garlic Cloves, minced
2 Tablespoons Cornflour
Method
Heat the oven to 200°C. Then toss the fries in half the olive oil and seasoning, pop them onto a baking tray and bake for 20 minutes, until golden and crispy.
Next, heat the remaining oil in a large non-stick pan over high heat. Add the chicken and cook for 5 mins per side. Add 600ml of boiling water to the pan and crumble in the stock cubes. Reduce the heat, cover and cook for a further 10-15 mins, until the chicken is fully cooked.
Remove the fries from the oven, and scatter the cheese over. Pop them back in the oven allowing the cheese to melt, being careful not to burn.
Next, place the kale, butter and garlic in a sheet of tin foil, wrap into a sealed parcel, and whack it in the oven for 5 mins.
Once the chicken is done, remove it from the pan and set aside. Put the pan with the sauce back on the heat, add the cornflour, and whisk for around 1 min until the sauce thickens into a gravy. Season well with black pepper.
Shred the chicken with two forks and add this to the gravy. Serve the chicken gravy on top of the chips, and your garlic buttery kale to the side.
