Chickpea & Broccoli Curry

Ready in 15 mins, super easy to make!

Serves: 4 Time: 15 minutes



  • 400ml canned coconut milk

  • 2 tbsp red curry paste

  • 2 broccoli heads, cut into florets

  • 400g canned chickpeas, rinsed and drained

  • 1 tbsp corn flour

  • 1 tbsp olive oil

  • 50g dry weight rice per person


  1. Start cooking your rice per pack instructions. Heat the oil in a large pan over medium-high heat. Saute the broccoli for 3-4 mins, then add the curry paste and cook for 2 more mins.

  2. Throw in the coconut milk and simmer gently for 5-8mins.

  3. Next, throw in the chickpeas and mix well to combine, bringing to a gentle simmer.

  4. Mix the corn flour with 2 tbsp of cold water and add to the pan, simmering for a minute or two.

  5. Once done, serve with your cooked rice and enjoy!
