Chickpea & Broccoli Curry

Ready in 15 mins, super easy to make!

Serves: 4 Time: 15 minutes
Ingredients
400ml canned coconut milk
2 tbsp red curry paste
2 broccoli heads, cut into florets
400g canned chickpeas, rinsed and drained
1 tbsp corn flour
1 tbsp olive oil
50g dry weight rice per person
Method
Start cooking your rice per pack instructions. Heat the oil in a large pan over medium-high heat. Saute the broccoli for 3-4 mins, then add the curry paste and cook for 2 more mins.
Throw in the coconut milk and simmer gently for 5-8mins.
Next, throw in the chickpeas and mix well to combine, bringing to a gentle simmer.
Mix the corn flour with 2 tbsp of cold water and add to the pan, simmering for a minute or two.
Once done, serve with your cooked rice and enjoy!
