Super easy to make, a great breakfast or lunch option.

Serves: 2 Time: 5 minutes
Ingredients
2 slices bread, toasted
165g chickpeas, drained
1 tbsp tahini
75g cherry tomatoes, quartered
1 tbsp fresh parsley, chopped
1 tbsp olive oil
Method
Throw the chickpeas in a small bowl with the tahini. Mash with a fork and season well with salt and pepper.
Combine the tomatoes, parsley and olive oil in a small bowl. Spread the chickpea mixture over the toasted bread, and top with the tomatoes. Easy peasy!
