Chickpea Bruschetta

Super easy to make, a great breakfast or lunch option.

Serves: 2 Time: 5 minutes



  • 2 slices bread, toasted

  • 165g chickpeas, drained

  • 1 tbsp tahini

  • 75g cherry tomatoes, quartered

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp olive oil


  1. Throw the chickpeas in a small bowl with the tahini. Mash with a fork and season well with salt and pepper.

  2. Combine the tomatoes, parsley and olive oil in a small bowl. Spread the chickpea mixture over the toasted bread, and top with the tomatoes. Easy peasy!
