Chickpea Fritters

15 Minute Chickpea Fritters. Little bites of heaven and ready in 15 minutes. Perfect lunch and dinner!

Serves: 4 Time: 15 minutes
Ingredients
4 Sweet Potatoes
2 Red Onions, diced
2 Eggs, beaten
Bag of Salad
4 Garlic Cloves
2 Tablespoons Curry Powder
1 Teaspoon Garam Masala
2 x 400g Can Chickpeas
7 Tablespoons Flour, or Cornflour
Optional Extras
Sweet Chilli Sauce for dunking your fritters
Handful Fresh Coriander, chopped
Method
Pierce the sweet potatoes, and pop them in the microwave on high for 10 minutes. Add the onion to a large frying pan on medium heat. When it’s nice and hot, add the garlic and cook for another 2 mins. Add the curry powder, garam masala and seasoning. Continue to cook until nice and fragrant.
Drain the chickpeas and mash them up in a bowl. When the sweet potatoes are cooked all the way through, remove them from the microwave, and slice them open length ways. They will be hot so be careful. Scoop out the flesh and mash until smooth.
Next add the mashed chickpeas, onion mixture, egg, coriander, and flour. Mix together well. Start making the fritters by taking a tablespoon of the mixture and patting them down. You can fry these off in batches and you can pop them in the oven so they stay warm.
Serve with a fresh green salad and dunk them in sweet chilli sauce.
