20 Minute Chinese Tofu Chow Mein. Lots of flavours converting a fave Chinese takeaway into a cheap and vegetarian meal.
Serves: 4 Time: 10 minutes
Ingredients
360g Noodles dry weight
2 Tablespoons Olive Oil
4 Garlic Cloves, minced
1⁄2 Red Cabbage
2 Carrots, julienned
4 Shallots, stems cut
100g Bean Sprouts
300g Firm Tofu, sliced
1 Tablespoon Soy Sauce
2 Tablespoon Chinese Cooking Wine, Mirin or Sherry
For The Sauce
1 Tablespoon Hoisin Sauce
3 Tablespoon Soy Sauce
1 Tablespoon Chilli Garlic Sauce
3 Teaspoons Sugar
1 Tablespoons Sesame Oil
120ml Water
Method
Cook the noodles according to package instructions, set aside. Combine the soy sauce and cooking wine and add the tofu, allowing it to marinade for 5 mins.
Next combine the sauce ingredients in a bowl, then set aside.
In a large wok, heat the oil over high heat. Add the garlic and fry for 10 seconds. Add the tofu and fry until it begins to caramelise, around 1 min.
Next add the cabbage and carrots. When they begin to soften, add the noodles, shallots, sprouts and the sauce, mix gently.
Serve and enjoy!
