Chinese Tofu Chow Mein

20 Minute Chinese Tofu Chow Mein. Lots of flavours converting a fave Chinese takeaway into a cheap and vegetarian meal.


Serves: 4 Time: 10 minutes

 

Ingredients

  • 360g Noodles dry weight

  • 2 Tablespoons Olive Oil

  • 4 Garlic Cloves, minced

  • 1⁄2 Red Cabbage

  • 2 Carrots, julienned

  • 4 Shallots, stems cut

  • 100g Bean Sprouts

  • 300g Firm Tofu, sliced

  • 1 Tablespoon Soy Sauce

  • 2 Tablespoon Chinese Cooking Wine, Mirin or Sherry

For The Sauce

  • 1 Tablespoon Hoisin Sauce

  • 3 Tablespoon Soy Sauce

  • 1 Tablespoon Chilli Garlic Sauce

  • 3 Teaspoons Sugar

  • 1 Tablespoons Sesame Oil

  • 120ml Water


Method

  1. Cook the noodles according to package instructions, set aside. Combine the soy sauce and cooking wine and add the tofu, allowing it to marinade for 5 mins.

  2. Next combine the sauce ingredients in a bowl, then set aside.

  3. In a large wok, heat the oil over high heat. Add the garlic and fry for 10 seconds. Add the tofu and fry until it begins to caramelise, around 1 min.

  4. Next add the cabbage and carrots. When they begin to soften, add the noodles, shallots, sprouts and the sauce, mix gently.

  5. Serve and enjoy!
