15 Minute Chorizo Sheet Pan. So easy and so quick, full of flavour!
Serves: 2 Time: 15 minutes
Veg Mixture
1 Onion, diced
1 Red Pepper, diced
1 Small Chorizo, peeled and diced
1/2 Teaspoon Paprika Powder
1/2 Teaspoon Cumin Powder
1⁄2 Teaspoon Dried Coriander
1 Tablespoons Olive Oil
2 Tablespoons Lemon Juice
Chicken
2 Chicken Breasts, cut into strips
1 Teaspoon Paprika
1/4 Teaspoon Cumin
1 Tablespoon Olive Oil
For Asparagus
1 Bunch Asparagus Spears, ends trimmed
2 Cloves Garlic, finely diced
2 Tablespoons Lemon juice
1 Tablespoon Olive Oil
Pinch of salt
Method
Heat the oven to 210°C. Then while the oven is heating up, combine all the veg mixture in a bowl and mix well. Then spread the mixture onto an ovenproof roasting dish.
Using the same bowl, add the chicken mixture and rub together with your hands. Spread the chicken mix on top of the veg mix and bake on the middle shelf for around 10 mins.
Meanwhile, combine the asparagus mix and set aside. Once the 10 minutes are over, remove from the oven and scatter the asparagus and any left over garlic and juices. Turn the heat down to 200°C and return to bake for a further 5 minutes.
Once ready serve immediately with extra salad if you like.
