Chorizo Stew

25 Minute Chorizo Stew. So easy and so quick, full of flavour!

Serves: 4 Time: 25 minutes


Fresh Ingredients

  • 1 Onion, chopped

  • 1 Carrot, finely diced

  • 200g Chorizo, diced

  • 400g Spinach

Cupboard Ingredients

  • 2 Tablespoons Olive Oil

  • 2 Sprigs Fresh Thyme or 1 Teaspoon Dried

  • 2 Garlic Cloves, finely chopped

  • 1 Teaspoon Paprika

  • 800g Chickpeas, rinsed and drained

  • 2 Tablespoons Red Wine Vinegar, Red Wine, or ACV

Optional Ingredients

  • 2 Bay Leaves

  • 1⁄4 Teaspoon Cinnamon

  • 1 Celery Stalk, finely diced


  1. Heat a large non-stick pan over medium heat, add the oil then saute the onions for around 5 mins.

  2. Add the carrot, celery, bay leaves and thyme then cook for 2 mins more before adding the chorizo, cinnamon, paprika and garlic. Cook until the chorizo oil is seen in the pan and the chorizo begins to crisp up.

  3. Next add the chickpeas, vinegar and around 150ml water, bring everything to a simmer, and cook until the chickpeas are heated through.

  4. Finally, add the spinach, mix well allowing the spinach to wilt. Season to taste, serve and enjoy!
