Classic Minestrone

15 Minute Classic Minestrone. Classic soup recipe, remove the pancetta and use Veg Stock if you would like to make this vegetarian.

Serves: 4 Time: 15 minutes



  • 150g Small Shell Pasta

  • 100g Pancetta

  • 2 Garlic Cloves, minced

  • 2 x 400g Can Chopped Tomatoes

  • 2 Teaspoons Dried Oregano

  • 2 Onions, diced

  • 100g Baby Kale

  • 1 Bunch Of Fresh Basil

  • 1 Teaspoon Of Veg Oil

  • 1.5 Chicken Stock Cubes, dissolved in 850ml boiled water

  • 2 Cans Of Cannellini Beans, drained and rinsed (or other white bean)


  1. Heat a large wide based pot over high heat. Add the oil and pancetta, cooking until crispy. Once crispy, add garlic, onion and oregano, cook for 1 min more.

  2. Next add the stock to the pancetta along with the tomatoes and pasta. Cover and simmer for 12 minutes, until the pasta is cooked and the liquid is a good consistency.

  3. Then add the beans, kale and half of the basil. Cook until the beans and kale are warmed through - around 2 mins.

  4. Season well and serve with some extra basil sprinkled on top.
