Classic Minestrone

15 Minute Classic Minestrone. Classic soup recipe, remove the pancetta and use Veg Stock if you would like to make this vegetarian.

Serves: 4 Time: 15 minutes
Ingredients
150g Small Shell Pasta
100g Pancetta
2 Garlic Cloves, minced
2 x 400g Can Chopped Tomatoes
2 Teaspoons Dried Oregano
2 Onions, diced
100g Baby Kale
1 Bunch Of Fresh Basil
1 Teaspoon Of Veg Oil
1.5 Chicken Stock Cubes, dissolved in 850ml boiled water
2 Cans Of Cannellini Beans, drained and rinsed (or other white bean)
Method
Heat a large wide based pot over high heat. Add the oil and pancetta, cooking until crispy. Once crispy, add garlic, onion and oregano, cook for 1 min more.
Next add the stock to the pancetta along with the tomatoes and pasta. Cover and simmer for 12 minutes, until the pasta is cooked and the liquid is a good consistency.
Then add the beans, kale and half of the basil. Cook until the beans and kale are warmed through - around 2 mins.
Season well and serve with some extra basil sprinkled on top.
