25 Minute Cowboy Loaded Fries. Inspired by one of my fave dishes I ate in America.
Serves: 2 Time: 25 minutes
Fresh Ingredients
40g Cheddar Cheese, grated
1 Spring Onion, sliced
1 Red Pepper, sliced finely
Other Ingredients
300g Potatoes, cut into fries
1 Can Red Kidney Beans, drained and rinsed
1 Can Cannellini Beans, drained and rinsed
1 Garlic Clove, minced
2 Tablespoons Tomato Paste
2 Tablespoons Olive Oil
Method
Heat the oven to 220°C. Then toss the fries in half the oil, season then roast in the oven for 25 mins until crispy.
Meanwhile, heat a large non-stick pan with the remaining 1 tablespoon of olive oil. Add garlic and pepper and cook for around 2 mins, until beginning to soften. Then add the tomato paste cooking until fragrant.
Add the beans to the pan, cook for 2 mins then add 250ml of boiled water, continue to cook until the liquid has evaporated. Then with a fork, begin to mash the mixture up to create more texture.
Serve the mashed beans on top of the fries, then sprinkle the cheese on top and pop everything under the grill to allow the cheese to melt. Serve and enjoy!
