Creamy Black Dahl

25 Minute Creamy Black Dahl. Been told this is the nicest dahl they have ever had by a previous bootcamper - I'll let you be the judge!

Serves: 4 Time: 25 minutes



  • 1 Cauliflower, cut into small florets

  • 2 Teaspoons Cumin Seeds

  • 2 Teaspoons Turmeric

  • 2.5 Tablespoons Olive Oil

  • 1 Onion, finely chopped

  • 2 Garlic Cloves, minced

  • 1 Tablespoon Ginger, minced

  • 1 Red Chili, finely chopped

  • 1 Small Bunch Coriander, chopped, stalks separated

  • 2 Pouches of Microwavable Puy Lentils, or canned

  • 400ml Canned Coconut Milk

  • 1 Lime, 1 juiced


  1. Heat oven to 200°C. Then toss the cauliflower in half the cumin seeds, half the turmeric, seasoning and 1 tablespoon of olive oil. Bake in the oven for around 20 mins.

  2. Heat 1 tablespoon of oil in a wide-rimmed pan, add the remaining spices and cook until the seeds begin to pop. Then add the onion and cook until softened.

  3. Stir in the garlic and ginger, chilli, coriander stalks, and the remaining olive oil and cook until fragrant. Add the lentils and coconut milk, mix well and bring everything to a gentle boil.

  4. Finally, squeeze the juice of one lime over the dhal, mix and divide between bowls, top with the roasted cauliflower and a sprinkling of coriander.
