Creamy Peanut Aubergine Curry

25 Minute Creamy Peanut Aubergine Curry. Perfect for peanut lovers, a lush creamy curry packed with veggies.

Serves: 4 Time: 25 minutes



  • 2 Aubergines, cut into chunks

  • 400ml Coconut Milk

  • 1 Tablespoon Peanut Butter

  • 1 Tablespoon of Lime Juice

  • 1 Pinch Sugar

  • 2 Onions, chopped

  • 2 Garlic Cloves, crushed

  • Thumb Size Piece Fresh Ginger, grated

  • 1 Teaspoon Cumin Seeds, crushed

  • 1 Teaspoon Coriander Seeds, crushed

  • 1 Teaspoon Turmeric

  • 1/2 Teaspoon Chilli Powder

  • 2 Packs Microwaveable Rice or 50g dry weight of rice per person

  • 1 Tablespoon Veg Oil


  1. Heat 1 tablespoon of oil in a pan. Sauté the aubergine until soft. Once done remove from the pan and set aside. You may need to do this in batches.

  2. Add the onions to the same pan and return it to the heat. Add the garlic and ginger. Cooking until fragrant.

  3. Next, add the coconut milk, lime juice, pinch of sugar and the peanut butter. Mix well and simmer for a few minutes melting the peanut butter, before adding the aubergine to the mix. Simmer for a further 15 minutes on low heat.

  4. Meanwhile, heat the rice according to the package instructions. Once done, serve the curry on top of a bed of rice and enjoy!
