20 Minute Creamy Serrano Ham Pasta. Creamy pasta with serrano ham and broccoli, just what the doctor ordered! Comfort Italian food yum!
Serves: 4 Time: 20 minutes
Ingredients
400g Pasta of Your Choice (I chose Linguine)
8 Slices of Serrano Ham
1 Red Onion, thinly sliced
Big Pack of Tenderstem Broccoli, end trimmed
Handful Parsley, chopped
250mls Chicken Stock, I like the Knorr Stock Pots
2 Garlic Cloves, minced
300g Creme Fraiche
Method
Boil a large pot of water over medium-high heat, once boiling throw in your pasta and cook until al dente (fully cooked but still a little firm), about 10 minutes depending on the pasta you chose (check the pack instructions). Drain the pasta (reserving a little of the pasta water for later), drizzle over a little olive oil to keep it from sticking and set aside.
Meanwhile, in a saucepan drizzle with a tiny bit of olive oil and throw in the serrano ham slices and cook for 2-3 minutes until a little crispy, then remove from the pan.
Next, using the same pan throw in garlic, onion slices, broccoli and cook for 4-5 minutes. Add a splash of water and put a lid on and cook for a further 2-3 minutes so the broccoli cooks.
Once done, pour in the chicken stock, mix well, then pour in the creme fraiche and serrano ham and bring to a boil. Simmer for 2 minutes.
Next we are adding back in the cooked pasta and stirring until fully combined. If you think it needs it, you can add in a little of the reserved pasta water here.
Once done, and the pasta is warmed through, sprinkle over the fresh parsley. OMG! Yummy!
