Crispy Halloumi Power Bowl

10 Minute Crispy Halloumi Power Bowl. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 2 Time: 10 minutes
Ingredients
120g Couscous
1 Large Egg
1 Teaspoon Smoked Paprika
225g Halloumi, sliced lengthways
1 Lemon, cut in half and juiced
1 Tablespoon Olive Oil (for the dressing)
1 Tablespoon Mint, chopped finely
Bag of Watercress
30g Flour
30g Panko Breadcrumbs
Method
Find 3 shallow dishes. Put the flour in the first. Put the beaten egg in the second, and the panko breadcrumbs with paprika in the third.
Begin to dip the halloumi in the flour, then egg mixture, and finally in the breadcrumbs. Making sure it's coated well. Transfer halloumi to a prepared baking sheet.
Cook the couscous according to the package instructions.
Heat 2 tablespoon of veg oil in a large non-stick pan over a high heat. Fry the halloumi until nice and golden on both sides, around 2 mins per side. Once done, transfer to tissue paper and set aside.
Meanwhile, mix the juice of the lemon, olive oil and mint together and set aside.
Serve the halloumi on top of a bed of couscous with watercress and the yummy dressing!
