Crispy Tattie & Beef Pie

30 Minute Crispy Tattie & Beef Pie. British home comfort pie, on the table in 30 minutes.


Serves: 4 Time: 30 minutes

 

Ingredients

  • 2 Celery Sticks, sliced thinly

  • 1 Onion, chopped

  • 2 Large Carrots, chopped into chunks

  • 1 Thyme Sprig

  • 2 Tablespoons Vegetable Oil

  • 1 Tablespoon Butter

  • 2 Tablespoons Plain Flour

  • 2 Tablespoons Tomato Purée

  • 2 Tablespoons Worcestershire Sauce

  • 1 Beef Stock Cube, crumbled

  • 8 Beef Sausages (Sainsbury's do good ones)

  • 680g Large Potatoes, peeled and cut into discs

  • 50g Mature Cheddar, finely grated

  • 50g Parmesan, finely grated

  • Serve with your favourite greens

Method

  1. Heat oven to 200°C. Then boil the potatoes until they are around 3⁄4 of the way cooked. Drain, toss them in olive oil and some thyme and pop them in the oven to start crisping up.

  2. Heat 1 tablespoon of the oil in a large non-stick pan over a high heat and fry the sausages off gently, just so they begin to get some colour but they aren't cooked through. Once browned, remove from the heat and set aside.

  3. In a large pot, melt the butter and add 1 tablespoon of veg oil. Saute the onion, celery and carrots and thyme, for around 10 mins. Next add the flour, tomato puree, Worcestershire sauce and stock cube.

  4. Begin to pour in 600ml of boiling water, mixing well until all combined. Bring to a boil then reduce to simmer. Add the sausage, cover and cook for around 10 mins.

  5. Once ready, transfer to a large oven-proof dish, layer the crisped potatoes on top with the grated cheese. Then pop it back in the oven to finish off baking. Remove when the cheese has melted and the sauce is bubbling.
