Dirty Loaded Fries

20 Minute Dirty Chicken Loaded Fries. Just wow. Try it!

Serves: 2 Time: 20 minutes


Chicken Marinade

  • 350g chicken thighs (skinless and boneless), cut into chunks

  • 3 tablespoons soy sauce

  • 2 garlic cloves, minced

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1 teaspoon pepper


  • 4 little gem lettuce, shredded

  • 200g white potatoes, sliced into fries

  • handful jalapenos, chopped (optional)

  • handful cherry tomatoes, diced

  • handful coriander, chopped

  • 1 teaspoon sesame seeds (optional)


  1. Throw the chicken in a bowl and add all the ingredients from the chicken list. Mix together to combine so all the chicken pieces are fully covered and leave to marinade as long as possible. Don't worry if you don't have time to marinade for long, they will still taste great.

  2. Next, you can either whack the fries onto a baking tray and bake in the oven for 20-25 mins until crispy. Or you can heat vegetable oil in a wok until very hot and throw your fries into the hot oil for 5 minutes until crispy. Make sure to be careful of spitting oil and place the fries onto kitchen roll after to blot out some of the oil.

  3. Meanwhile, heat a drizzle of olive oil in a large pan over high heat. Once hot, add the chicken thigh chunks, cook for 3-4 minutes on each side. Make sure there is no pink in the middle.

  4. Meanwhile, prep all your salad bits.

  5. Once everything is done, load up a bowl with shredded lettuce, then your fries with the salad bits, cooked chicken thighs, coriander and a sprinkle of sesame seeds. YUM!!!
