Dirty Sanchez Tacos

10 Minute Dirty Sanchez Tacos. Mexican tacos that are vegetarian, yes please!

Serves: 2 Time: 10 minutes


 

Ingredients

Fresh Ingredients

  • 50g Cabbage, sliced

  • 1⁄2 Red Pepper, cut into lengths

  • 150g Salsa, of your choice

  • 100g Cheddar Cheese

  • 1⁄2 Avocado, sliced

Other Ingredients

  • 1 Tablespoon Olive Oil

  • 1 Onion, halved and sliced

  • 200g Canned Black Beans, rinsed and drained

  • 1 Garlic Clove, minced

  • 1⁄2 Teaspoon Chilli Powder

  • 1/4 Teaspoon Ground Cumin

  • 4 Taco Shells

  • Serve with side salad if you like

Method

  1. Heat the oil in a large non-stick pan, then saute the cabbage and onion for around 5 mins.

  2. Next, stir in the black beans, salsa, garlic, chilli powder and cumin; bring to a boil. Then reduce the heat, and simmer with a lid on for about 5 minutes.

  3. Meanwhile, warm your taco shells in the oven.

  4. Once ready, pile your veg into the shells, top with cheese and avocado. Enjoy!
