10 Minute Dirty Sanchez Tacos. Mexican tacos that are vegetarian, yes please!

Serves: 2 Time: 10 minutes
Ingredients
Fresh Ingredients
50g Cabbage, sliced
1⁄2 Red Pepper, cut into lengths
150g Salsa, of your choice
100g Cheddar Cheese
1⁄2 Avocado, sliced
Other Ingredients
1 Tablespoon Olive Oil
1 Onion, halved and sliced
200g Canned Black Beans, rinsed and drained
1 Garlic Clove, minced
1⁄2 Teaspoon Chilli Powder
1/4 Teaspoon Ground Cumin
4 Taco Shells
Serve with side salad if you like
Method
Heat the oil in a large non-stick pan, then saute the cabbage and onion for around 5 mins.
Next, stir in the black beans, salsa, garlic, chilli powder and cumin; bring to a boil. Then reduce the heat, and simmer with a lid on for about 5 minutes.
Meanwhile, warm your taco shells in the oven.
Once ready, pile your veg into the shells, top with cheese and avocado. Enjoy!
