20 Minute Easy Cheesy Veggie Burger. Veggie burger super easy and cheesy!
Serves: 2 Time: 20 minutes
Ingredients
1 Red Onion, cut into wedges
1 Tomato, cut into wedges
1 Tablespoon Of Butter
30ml Water
1 Leek, washed and sliced finely
1 Egg, yolks separated
1 Tablespoon Of Wholegrain Mustard
40g Cheddar Cheese, grated
30g Panko Breadcrumbs
300g Potatoes, cut into chunky chips (optional to peel)
2 Tablespoons Of Veg Oil
Green Salad Of Your Choice
Method
Heat the oven to 220°C then toss the potatoes in 1 tablespoon of the oil, season then pop them on a baking tray and roast for around 15 mins.
Heat the butter in a large non-stick pan, when melted add the leek and the water, cooking until all the water has gone. Once cooked, remove them from the pan and into a bowl in the freezer to fully cool before the next steps.
Once it has been 15 mins, add the onions and tomatoes to the tray with the potatoes and continue to cook for a further 15 mins.
Meanwhile, combine half of the breadcrumbs with the cheese, leek, egg yolk, mustard and seasoning. Then make 2 even sized patties and coat each patty in the egg white and remaining breadcrumbs.
Heat the veg oil in a large non-stick pan, when hot begin to fry the patties until they are evenly browned.
Serve your patties with crispy potatoes and a fresh green salad. Wowzers!
