Eggy Bread

10 Minute Eggy Bread. This gives me nostalgic vibes to when I was a kid. So quick and easy to make - perfect for a weekend brunch.

Serves: 2 Time: 10 minutes


 

Ingredients

  • 250g Cherry Tomatoes, halved

  • 1 Spring Onion, sliced

  • 1⁄2 Handful Chives, sliced

  • 2 Eggs, beaten

  • 2 Large Slices Bread

  • 30ml Milk

  • 1 Tablespoon Veg Oil

  • 1 Tablespoon Olive Oil

Method

  1. Add the milk to the bowl along with the eggs and half the spring onions and chives. Season and mix well.

  2. Soak each slice of bread into the milk mix evenly. Heat two non-stick pans over high heat. Add the veg oil to one and the olive oil to the other.

  3. Add the chopped tomatoes and the remaining chives and onions to the olive oil and sauté gently for 5 minutes.

  4. When the veg oil is nice and hot add the bread and fry evenly on both sides.

  5. Once done serve the eggy bread with the sautéed tomatoes on top!
