30 Minute Facon + Broccoli Rice Bowl. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 4 Time: 30 minutes
Ingredients
2 Packs of Microwavable Rice
1 Broccoli Head, cut into florets
2 Tablespoons Soy Sauce
1 Tablespoons Olive Oil
4 Large Eggs
Salt and Pepper
3 Tablespoons Coriander, chopped
2 Spring Onions, sliced
2 Tablespoons Jalapenos, chopped
For The Facon
1 Aubergine, halved lengthwise and sliced very thinly
1 Tablespoon Olive oil
1 Tablespoon Tamari
1 Tablespoon Worcestershire Sauce
1 Tablespoon Maple Syrup
1 Tablespoon Smoked Paprika
1 Pinch Salt
1 Pinch Garlic powder
1/4 Teaspoon Pepper
Method
Heat the oven to 200°C.
Combine all the Facon sauce ingredients together in a bowl, mix well.
Brush the sauce over both sides of the aubergine, coating well, then lay them on a baking tray. Bake for 30 mins until crisp, being careful not to burn.
Heat a large non-stick pan and add the broccoli, fry until beginning to charr. Add 100ml of water and continue to cook until the water has more or less gone. Add the soy and mix well.
In a separate non-stick pan, fry the eggs to your liking.
Meanwhile heat the rice according to the package instructions.
Then divide the rice and broccoli between 4 tupperware bowls, top with the egg, facon, sliced spring onions and jalapenos.
