10 Minute Falafel Burger Night. Veggie comfort food at it's best!
Serves: 4 Time: 10 minutes
Fresh Ingredients
60g Red Cabbage, finely shredded
1 Lemon, juiced
3 Spring Onions, sliced
Small Bunch Coriander, chopped
4 Burger Buns or Wrap
Cupboard Ingredients
400g Chickpeas, drained and dried on kitchen roll
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1 Green Chilli, chopped (optional)
3 Tablespoons Flour
1 Tablespoon Olive Oil
2 Garlic Cloves, crushed
Optional Toppings
4 Tablespoons Hummus or
2 Tablespoons Sweet Chilli Sauce
2 Tomatoes, sliced
1/2 Cucumber, sliced
4 Gherkins, sliced
Salad
Method
Add the cabbage and lemon to a bowl, toss and season well, then set aside.
Put the chickpeas, chilli, garlic, spices, spring onions, coriander and flour into a food processor. Season and blitz until smooth. Mould 4 burgers and pop them in the fridge to chill for 5 mins.
You can make a larger batch if you like, I would freeze them at this stage to use in later weeks.
Heat the olive oil in a large non-stick pan, fry the falafels for around 5 mins each. Until golden on both sides and cooked through.
Spread the hummus on the buns. Top with the pickled red cabbage, falafels and your chosen toppings, serve and enjoy!
