Feta, Quinoa & Beetroot Salad

Perfect for lunch on the go!

Serves: 4 Time: 5 minutes



  • 370g cooked quinoa

  • 200g feta cheese, cubed

  • 2 medium cooked beetroots, cubed

  • 165g chickpeas, drained

  • 1 lemon, zest and juice

  • 2 tbsp olive oil


  1. Combine the cooked quinoa, feta cheese, beetroot and chickpeas in a bowl. Drizzle with olive oil, lemon juice and zest.

  2. Season with salt and pepper and mix well to combine. Divide between 4 bowls or store in an airtight container for lunches on the go. Will last 2-3 days in the fridge.
