Feta Stuffed Peppers

20 Minute Feta Stuffed Peppers. Can be made for Lunch or Dinner these flavour packed peppers are lush!

Serves: 2 Time: 20 minutes



  • 1 Red Onion, diced

  • 1 Pack Of Microwavable Grains (Merchant Gourmet do great ones)

  • 1 Small Bunch Of Parsley, chopped

  • 1 Red Pepper, halved lengthways

  • 1 Garlic Clove, minced

  • 1 Tablespoon Balsamic Vinegar

  • 100g Greek Feta Cheese

  • 1 Courgette, diced

  • 1 Carrot, diced

  • 2 Tablespoons Olive Oil


  1. Heat the oven to 220°C.

  2. Heat a large non-stick pan over high heat, add half the oil and saute the diced veg for 4 mins. Add garlic and cook for a further 2 mins, until the veg is soft and beginning to brown on the edges. Season well.

  3. Meanwhile, drizzle the remaining oil over the pepper halves and roast in the oven for 10 mins, remove then divide the feta between each half and pop it back in the oven until the pepper is fully cooked.

  4. Next, heat the grains according to the package instructions. Once the grains are cooked, add them to the pan with the veg, along with chopped parsley.

  5. Season, then divide between two plates. Top each plate with the roasted pepper and feta, and drizzle the balsamic over the top!
