30 Minute Filo - Good Pie. Great for showing off to guests, this pie is so delish!

Serves: 4 Time: 30 minutes
Ingredients
350g Frozen Spinach
3 Garlic Cloves
3 Eggs, beaten
250g Jarred Roasted Red Peppers, drained and chopped
200g Feta Cheese, crumbled
1 Large Handful of Parsley, chopped
1⁄2 tsp Dried Chilli Flakes
Zest and Juice of 1 Lemon
1 Pack Filo Pastry (12 sheets)
75g Melted Butter
Salt and Pepper
Green Salad, to serve
Method
Heat the oven to 200°C and boil a kettle full of water. Once boiled, pour the boiling water over the spinach, allowing it to defrost.
Meanwhile, combine all the remaining ingredients with the beaten eggs. Then drain the spinach, squeezing out any excess water with your hands and add it to the egg mixture. Ensure everything is mixed well then season.
Line a flat baking tray with greaseproof paper. Unravel the pastry, taking one sheet at a time, brush one side and layer them on top of each other, at different angles, creating a star-like shape.
Begin to spoon the filling into the centre of the star, creating a circle shape. Then peel the edges up encasing the filling nicely, keeping the centre open.
Finally brush the edges with some melted butter and bake for around 30 mins until the pastry is nice and golden.
